Mountain Blackberry Cobbler

Mountain Blackberry Cobbler½ cup margarine
1 cup granulated sugar
1 cup flour
2 tsp. baking powder
1 cup milk
3 cup blackberries
½ cup WV Fruit and Berry Mountain Blackberry Preserves

Cream the margarine and sugar together. Combine flour and baking powder. Add to creamed mixture alternately with milk. Pour into greased 9 X 13 pan. Rinse blackberries and place them in a separate bowl. Heat preserves in a microwave safe bowl for 15 seconds and stir to soften. Pour over blackberries and mix. Bake at 350 for 50 – 60 minutes, until golden brown and bubbly. Serve with ice cream.

Jalapeno Glazed Meatballs

Jalepeno glazed-meatballs1 lb. ground beef
1 tsp. salt
½ cup dry bread crumbs
1/8 tsp. pepper
1/3 cup minced onion
½ tsp. Worcestershire sauce
¼ cup milk
¼ cup shortening
1 egg
1 (12 oz.) bottle chili sauce
1 Tbsp. parsley
1 (10 oz.) WV Fruit and Berry Jalapeno Pepper Jam

Mix beef, crumbs, onion, milk, egg and the four seasonings. Gently shape into 1 inch balls. Melt shortening in skillet and brown meatballs, then drain. Heat chili sauce and jelly in a pan until jelly is melted, stirring constantly. Add meatballs and stir until coated. Simmer 30 minutes. Makes 2 dozen meatballs.

Peach Glazed Chicken Thighs

Peach-Glazed-Chicken¼ Cup WV Fruit and Berry Peach Preserves
¼ Cup honey
2 Tbsp. soy sauce
2 Tbsp. minced fresh ginger
6 Cloves garlic, minced (1 Tbsp.)
½ tsp. cayenne pepper
¼ Cup cider vinegar
8 bone-in chicken thighs (3 ½ to 4 lb. total)

  1. Place the oven rack in bottom third of oven. Preheat oven to 400. For glaze, in a small saucepan combine fruit preserves, honey, soy sauce, ginger, garlic, and cayenne. Heat over medium-low heat until fruit preserves is melted. Remove and stir in vingar, cool.
  2. Line a 13×9-inch baking pan with foil. Arrange chicken in single layer. Pour peach glaze over chicken, turning pieces to coat. Arrange pieces skin sides up. Bake, uncovered, 40 to 45 minutes or until done (175 F in thickest part) and tops are browned, brushing with glaze two times during baking. Skim fat from pan juices, serve juices over chicken. Makes 8 servings.

Berry Delicious Salad Dressing

FB DressingDo you have just a little bit left in the bottom of the jar of one of your West Virginia Fruit and Berry jams, preserves or fruit butters? Add one part vinegar to three parts oil in the jar. Add a little salt and pepper to taste. Shake vigorously and you’ll have a delicious vinagrette dressing. Any of our products will work.

Pour over salad or fresh vegetables.

Muddle a lemon wedge, lime wedge, and an orange wedge in the bottom of a glass, leaving the fruit in the glass.  Add ½ WV Fruit & Berry Wild and Wonderful Raspberry Wine or Mountain Blackberry Wine, ½ Lambrusco or other light sweet red wine, splash with a Sangria Mix. Serve on ice with an orange slice and additional fruit.

Very Berry Wine Spritzer


Raspberry Wine Spritzer

Cool off with a delicious Wine Spritzer made with West Virginia Fruit and Berry Wine! According to Bon Appétit, a good rule of thumb, regardless of batch size, is three parts wine to one part club soda. Just pour your favorite WV Fruit and Berry wine into a wineglass filled with ice; top off with club soda and a dash of orange or lemon bitters. Garnish with an orange or lemon twist.
